Grandma Pizza
Grandma pizza has become one of my favorite homemade pizzas. The thick, airy crust, crispy edges, plenty of mozzarella, and simple tomato sauce make it hard to beat. In the video I followed King Arthur's grandma pizza method and used two of their products I enjoy—Dough Flavor in the dough and Pizza Seasoning Blend in the sauce. The recipe below is my working home version of that style, not a reprint of theirs.

Ingredients
- 400 g (about 3¼ cups) all-purpose flour
- 280 g (1 cup plus 3 tablespoons) water
- 6 g (1 tsp) kosher salt
- 3 g (1 tsp) instant yeast
- 15 g (1 tablespoon) olive oil, plus more for the pan
- 1 teaspoon King Arthur Dough Flavor (optional)
- 1 cup (240 ml) crushed tomatoes
- 1 tablespoon extra virgin olive oil
- 1 clove garlic, minced
- 1 teaspoon King Arthur Pizza Seasoning Blend, or dried oregano
- Pinch of salt
- 8 oz (225 g) low-moisture mozzarella, shredded
- Grated Parmesan, for finishing
- Fresh basil, for serving
Instructions
- Mix the flour, water, salt, yeast, olive oil, and Dough Flavor if using until a sticky dough forms. Knead briefly until it comes together.
- Cover and let rise until doubled, about 1½–2 hours.
- Oil a sheet pan generously. Press the dough into the pan, stretching it toward the corners. If it springs back, rest 10 minutes and continue.
- Cover and let the dough get puffy in the pan, 45–60 minutes.
- Stir together the tomatoes, olive oil, garlic, seasoning, and salt.
- Heat the oven to 500°F (260°C).
- Dimple the dough. Spread on the sauce, then the mozzarella.
- Bake until the edges are crisp and deeply browned and the cheese is bubbling, 18–25 minutes.
- Finish with Parmesan and basil. Cool a few minutes, then cut into squares.
Chef’s Notes
Grandma pizza lives in the pan: enough oil for crisp edges, and a dough thick enough to stay airy in the middle. Dough Flavor and Pizza Seasoning Blend are optional extras I used in the video. If you use a published King Arthur formula instead, follow that bag or page—this is only a style draft.
